Mini Blueberry Muffin Bites
Definitely have to try these cute little paleo-approved muffin bites! :) This recipe is more on the simpler size, so totally doable!
Ingredients:
- 3 eggs
- 3 tbsp honey
- 2 tbsp coconut oil, melted
- 2 tbsp milk (coconut, almond milk, etc)
- 1/4 tsp salt
- 1/4 tsp vanilla
- 1/4 tsp baking powder
- 1/4 cup coconut flour
- 1 cup blueberries
Instructions:
- Preheat oven to 400 degrees
- Mix together the eggs, coconut oil, honey, milk, salt, and vanilla
- Combine the baking powder and coconut flour before adding them to the wet mixture
- Thoroughly combine the ingredients before adding the blueberries
- Add the mixture into a mini muffin tin, and bake for 10 minutes or until done (If you are using regular sized muffin tins, 20 minutes should work)

Avocado Fries
Crunchy on the outside, creamy and nutty inside, these avocado fries are totally over the top. Chef Trey Foshee, at George’s at the Cove restaurant in La Jolla, California, serves them with grilled steak.
Ingredients:
▪ Canola oil for frying
▪ 1/4 cup flour
▪ About 1/4 tsp. kosher salt
▪ 2 large eggs, beaten to blend
▪ 1 1/4 cups panko (Japanese bread crumbs)
▪ 2 firm-ripe medium avocados, pitted, peeled, and sliced into 1/2-in. wedges
Preparation:
1. Preheat oven to 200°. In a medium saucepan, heat 1 1/2 in. oil until it registers 375° on a deep-fry thermometer.
2. Meanwhile, mix flour with 1/4 tsp. salt in a shallow plate. Put eggs and panko in separate shallow plates. Dip avocado in flour, shaking off excess. Dip in egg, then panko to coat. Set on 2 plates in a single layer.
3. Fry a quarter of avocado slices at a time until deep golden, 30 to 60 seconds. Transfer slices to a plate lined with paper towels. Keep warm in oven while cooking remaining avocados. Sprinkle with salt to taste.

Pumpkin Spice Mini Muffins

This is definitely pumpkin season and these muffins are a perfect healthy, delicious way to get your pumpkin fix! They turned out to be the most moist of my mini muffins and the lowest calorie too! If you want to change it up you could double the amount of pumpkin pie spice and cinnamon to make them even nuttier and spicier, or add crushed nuts like walnuts or pecans. Try making a double batch (or mix and match different mini muffin flavors) and freezing them 4-5 at a time in Ziploc bags for perfect on the go snack packs. Go make them, go go! :)

i jam packed this baby with grilled chicken, roasted tomatoes, spinach, avocado, provolone cheese, and parmesan pesto sauce and grilled it all up in olive oil :D and omg i used half the avocado this time instead of just 1/4 like a usually do and it turned it so much yummier. and i ate some pistachios with this too :)
